my 5 o clock breakfast

i woke up really late today (but was happy about that cause i REALLY needed the rest) & jake went to salem to practice with early adopted about 1/2 hour after we woke up. the sun was shining and i made a relatively easy to accomplish to do list for the day over my super strong coffee. first off - grocery shopping, especially while the sun was out because i definetly haven't had my fill of solar energy lately.

on my way back from trader joes, i was finally getting the grumbles in my stomach to eat. what would my first meal of the day be? it took me about 1 minute flat to decide that i definetly wanted my idea of the perfect breakfast. usually jake does the breakfast cooking and he does so amazingly. i thought i'd give my version of an ultra super mega deluxe breakfast an honest try. boy im glad that i did.

recently, i've been ordering eggs sunny side up when we go out to breakfast. this is the way my sweetheart always orders them and after being a pigeon to his plate, decided this is the way that i like my eggs. i was actually pretty grossed out by eggs until about 6 months ago. scrambled was SERIOUSLY the only way i thought you could order eggs ever (see my "food adventures" post earlier this month for why) & they were always cold when i got them. this is why i didn't eat eggs for approximately 15 years.

so i called my mom who always can give me wonderful cooking advice. my stepdad was also there and he was pretty much raised a chef - so i knew i was in luck. she explained the simple (yes, i was surprised) way to make a sunny side up egg. i whipped it up as soon as i got home. i decided to take a picture of my 5 oclock breakfast and figured this would be a good blog entry & could share the picture of my first EVER time making sunny side eyes at 23 years old. haha.

it might not be that pretty, but it was SO delicious.
have the trader joes salsa in the background because i was planning to doctor the "mistake" egg with something, and that was the best looking thing in my refrige. especially with the salsa on my mistake egg. now i know why kids always put ketchup on their eggs.
